The cup offers medium acidity and a smooth body with a delightful mix of chocolatey richness, warm caramel, and a subtle hint of red fruit, like cherry or cranberry. The aroma is comforting, with gentle spicy undertones and a warm, inviting sweetness that’s perfect for cold winter days.

Roasting Profile for Sonofresco Fluid Bed Air Roaster

Using a Sonofresco fluid bed air roaster allows for a consistent roast that brings out the best of these flavors. Here’s a recommended approach for a medium roast:

  1. Profile: Set the profile with an end temperature of 396.5°F (202.5°C) to ensure even heating. This would be a D-4 on a Sonofresco roaster
  2. Finish at Medium Roast: Stop just after the first crack to reach a medium roast level. Ending at this point preserves the fruity acidity and ensures a smooth, rich finish without smoky notes.

Avoid pushing to second crack, as this will maintain the brightness and the complex flavors suited to the blend.
