    8:30 – 9:45 Introduction to green coffee

    Chain of custody from seed to cup. Define certifications, varietals, and regions.

    10 – 11:30 Basic cupping

    Introduce cupping terms and protocol. Comparative cupping to demonstrate aromatics, body, acidity, balance, and sweetness using coffees that are representative of each of the characteristics. Discuss “why we cup,” quality control, product development, roast profile, and other.

    1:00 – 2:00 Dynamics of roasting

    Basic heat exchange and coffee transformation. Introduce roast process through hands-on roaster demonstration. Roast a single origin with three different profiles (light, medium, dark.) These will be cupped at the very end of the day.

    2:00 – 3:00 Blending basics

    Overview of blend concepts, building a blend, and espresso blending.

    3:00 – 4:30 Comparative cupping of profiled coffees

    Discuss characteristics and changes in development of the coffee as it goes through the different stages of development. Managing chlorogenic acids, Mallaird reaction, fist crack, second crack, and dry distillation.
